  •  4 handfuls wild mushrooms
  • 1 clove garlic crushed
  • 1 glug olive oil
  • 25g butter
  • 1 lemon
  • 1 handful parsley roughly chopped

Heat oil in a frying pan. Add mushrooms, plenty of seasoning and toss well.

Fry on a medium heat for a few minutes. Add butter and garlic, and fry for a few more minutes, ensuring that the buttery garlic juices are well distributed.

Once mushrooms are tender add a good squeeze of the lemon (or a splash of wine) and continue to simmer, to reduce the juices and glaze the mushrooms.

Take the mushrooms off the heat, stir through the herbs and pile onto good toast, drizzled with olive oil.
